Recipe: Chef Landsberg's Roasted Pineapple with Rum, Apple Cider, & Vanilla Ice Cream

Suggested Pairing: 2005 Domaine Vin Glace


  • 1 small pineapple
  • 2Tb sugar
  • 1Tb rum
  • 2Tb apple cider
  • 1Tb sherry vinegar
  • 2Tb butter
  • Vanilla Ice Cream


Remove the skin from the pineapple and cut into thick round slices. Coat the pineapple with the sugar and sear in a hot pan until nice and caramelized. Flip the pineapple in the pan and add the rest of the ingredients. Cook for 2-3 mins until done. Serve with vanilla ice cream.
