Bakery Recipe: Fruit Clafoutis

Fruit Clafoutis Recipe

Fruit Clafoutis is a wonderful recipe for the holidays that works well with apples, pears, berries, and stone fruit.

Scrape the seeds from the 1/2 vanilla bean
Split vanilla bean and scrape seeds

Begin custard batter by whisking together the following ingredients in a large mixing bowl:

8 Eggs
1 C. Milk
1 C. Cream
1 1/2 C. Sugar
1/2 Vanilla Bean

Mix together 1/2 tsp salt and 1/2 C all purpose flour, whisk into batter
Whisk salt and flour mixture into batter

Mix together the following ingredients and whisk into the custard batter:

1/2 tsp salt
1/2 C. All purpose Flour

Place pears in bottom of baking dish
Place fruit in bottom of baking dish

Let the batter rest for 30 minutes (to relax the gluten in the flour).

Butter a baking dish, sprinkle some sugar over the bottom of the dish.

Fill the bottom of the dish with fruit of your choice (apples, pears, berries, stone fruit all work well).

Pour custard over the fruit.

Cover with powdered sugar and serve immediately

Bake @ 425 degrees for 10 – 15 minutes;
turn oven down to 375 and continue to bake for another 15-20 minutes, until the center is just set.

Cover with powdered sugar and serve immediately.
